 CAKE CARE

TRANSPORTING YOUR CAKE:
As a general rule we suggest:
· Transport the cake in a cool vehicle (air conditioned)
· Place cake on a flat surface—preferably the trunk
· If possible please not hold the cake on your lap or place on the back seat  as there  are not even or level surfaces.
· Avoid speeding, making short stops and sharp turns.

SERVING YOUR CAKE:
DISASSEBLING:
· Your cake is assembled using a plate and dowel support system; each tier will contain 4 plastic dowels attached to a cake plate.
· Place your hand beneath the tier and feel for the separation between the cake board and the cake plate.
· Using the cake board as a bottom base remove the tier completely
· Place the tier on a flat surface; proceed to cut and service the cake.
· Remove the plate/dowels of the next tier.
· Repeat separation/removal process for each tier.

CUTTING YOUR CAKE
Please note that our cakes are based on the serving size of 1” x 2” x 4”\
·        After disassembling the cake, start cutting the largest tier first.  This way, if you have any leftover cake, it will be the smaller, easier-to-store tiers.
·        Cut a 2" strip down one side of the cake.
·        This part is optional, but it makes for a cleaner cut of cake –Gently tip the 2" strip of cake onto its side. Don’t worry it’s very sturdy!
***You can leave the 2" strip standing and proceed as follows***
·        Once the 2" strip is on its side, start cutting pieces 1" wide.
·        Using a cake cutting comb (as shown in the picture) or a gloved hand will help keep the cake "hands free" and less messy for the person cutting the cake.
·        Continue cutting 1" pieces from the 2" strip.
·        When the 2" strip is gone, cut another 2" strip from the remaining cake and repeat the process.
·        When you get to the last 2" strip, for stability purposes it is strongly recommended that it be placed on its side for cutting.
·        Transfer the cut piece of cake to a plate.


STORING YOUR CAKE:
·        It’s best to keep your cake chilled until close to serving time and then bring to room temperature before serving.
·        Your cake can be left at room temperature for three to four days - but please use your best judgment.
·        If you have a perishable filling (ie. Fresh fruit filling, curd etc) we suggest that you refrigerate your cake and bring to room temperature before serving.
